Mahasiswa Kelompok 11 Kuliah Kerja Nyata Tematik Kolaboratif (KKN-TK) Universitas Bojonegoro (Unigoro) menyelenggarakan kegiatan sosialisasi bertajuk “Pengolahan Jamur Janggel Menjadi Olahan Sambal Pendamping Nasi Gulung” pada Senin (28/7/2025), bertempat di Balai Desa Wonocolo, Kecamatan Kedewan, Kabupaten Bojonegoro.
Sosialisasi ini dimulai pukul 14.00 WIB dan diikuti oleh ibu-ibu anggota PKK Desa Wonocolo. Kegiatan tersebut bertujuan untuk memberikan edukasi kepada masyarakat, khususnya ibu rumah tangga dan pelaku UMKM, tentang pemanfaatan jamur janggel, jamur yang tumbuh pada media limbah bonggol jagung sebagai bahan dasar sambal. Inovasi ini diperkenalkan sebagai alternatif pendamping nasi gulung, makanan khas Wonocolo yang selama ini hanya dikenal dengan sambal teri.
Kegiatan diawali dengan pembuatan media tanam jamur janggel, dilanjutkan dengan panen langsung dari media yang telah disiapkan. Setelah itu, peserta mengikuti demonstrasi memasak sambal jamur yang sekaligus menjadi ajang pelatihan memasak bersama. Seluruh rangkaian ditutup dengan sesi makan bersama hasil olahan sambal yang disajikan sebagai pelengkap nasi gulung.
Koordinator Program Kerja, Setyo Wahono Al Irvan, menjelaskan bahwa jamur janggel dipilih karena limbah bonggol jagung di Wonocolo tergolong melimpah, namun belum dimanfaatkan secara optimal. Selain sebagai langkah pengolahan limbah, pemanfaatan jamur janggel juga dinilai mampu menciptakan peluang usaha baru bagi masyarakat desa.
Kegiatan ini mendapat tanggapan positif dari peserta. Salah satu anggota PKK, Ibu Sukati, menyampaikan antusiasmenya terhadap pelatihan tersebut. Menurutnya, pelatihan ini memberikan pengetahuan baru yang sangat bermanfaat dan mudah diterapkan di rumah.
“Biasanya bonggol jagung hanya kami buang, ternyata bisa dipakai untuk tanam jamur dan hasilnya enak juga dibuat sambal.” ujar Sukati.
Para peserta juga menyampaikan ketertarikan untuk mencoba menanam jamur janggel sendiri dan mengembangkan olahan sambalnya sebagai produk lokal.
Melalui kegiatan ini, mahasiswa KKN-TK berharap dapat menumbuhkan kreativitas masyarakat dalam mengolah bahan pangan lokal sekaligus meningkatkan ketahanan pangan dan perekonomian berbasis desa. Program ini menjadi salah satu wujud nyata kolaborasi antara perguruan tinggi dan masyarakat dalam pembangunan berbasis potensi lokal. (alf/lug)
